I made it on Sunday for light lunch. It was quick and tasty.
Ingredients:
1-Canned
cannellini beans drained
1 Tbsp olive oil
1/2 c. finely chopped onions
2 T finely chopped cilantro/coriander/dhaniya
1/2 t salt

¼ cup
chopped cucumber
¼ cup
chopped tomato
Black pepper as per taste
3 Tbsp fresh lemon juice

Method:
Place
the beans in a large bowl. Add olive oil, onions, tomato ,cilantro, cucumber,
salt, lemon juice and pepper to taste. Stir gently. Serve at room temperature.
Tip:- If
you do not find canned beans, then soak the beans overnight and next day boil
them with little salt.
-Any
kind of beans can be used for this recipe; example- kidney beans, lima beans,
black eyed beans etc.
