1 Minute Microwave Pizza In A Mug | No Egg 60 Second Pizza in a Mug | No Oven Pizza | Vegetarian Pizza


Okay, so this by far is the most interesting recipe I am sharing with you all. To those of you who follow me on my social media platforms would know how much I love and savour Pizza. I can eat a pizza almost every day, yes yes and I am not exaggerating, I promise I can; but then I am reminded of Joey’s dialogue from the television series Friends- once on lips, forever on the hips. So if like me you also loooove pizza and there are days when you crave for it really bad, but want to shut your mouth because of all the calories-then this recipe is going to solve your problem.

So are you ready?

This is:

·         1 minute pizza

·         A 60 second pizza

·         No oven pizza

·         Gets ready in a microwave

·         You only need a cup, a mug or a bowl –no other utensil required

·         No knead pizza

·         Anytime pizza, instant pizza and preparations takes only 1 minute.

·         Freshly made, no store bought pizza base needed

·         Can satisfy anytime hunger pangs.

·         Great for kids who loves pizza; this way you can portion control too.

·         Office lunch time meal idea too. I would prepare it a mug; cover it with Clingfilm and then just microwave at work. Piping hot pizza ready in 1 minute.


So if the above point entices you and excites you, you are on the right page. Now imagine, you have that sudden urge to have a pizza, but you are not hungry enough to have one whole pizza. Or you don’t want those frozen pizza from the supermarket or a store bought dominos, pizza hut or papa john pizza, you want to make your own, but again you don’t have so much time to knead the dough and work with the yeast-in both the above cases this one minute pizza in a mug in a microwave is your answer.

There are tons of recipes on this concept and I tried so many of them until this one worked really well for me. So this is my tried and tested recipe after many failures and attempts.

How to make a good Microwavable Pizza in a mug/cup/bowl? What are tips to make a good pizza in a cup? Here are my tips.

  • Measure the ingredients. Do not eyeball the ingredients or just use as per approximation. Correct measurements are very important.
  • Use a mug which is broad from the top, you want the microwave waves to reach up till the bottom, so cup that has a broad opening from the top, just like a bowl will do the trick.
  • Do not add too many toppings, just a handful. Remember it is a very small pizza.
  • This is an eggless recipe, without an egg and this is my next tip-please do not use egg, it will ruin your pizza.
  • Do not try to use whole wheat flour, I tried and it failed miserably.
  • You can use tomato ketchup or a mix of spicy sauce and tomato sauce instead of pizza sauce-and it work just fine.
  • Last but not the least, have it hot, eat it right when it’s out from the microwave. This is instant pizza recipe so you cannot reheat it –it will become rubbery, so have it instantly.

If you follow the above tips, I promise you can just not go wrong with this recipe. So, here is

Indian Vegetarian, No Eggs, 1 Minute Microwave Instant Pizza in a Mug recipe.


Ingredients:

4 tablespoons all purpose flour/maida

1/8 teaspoon baking powder

1 pinch baking soda

1/8 teaspoon salt

4 tablespoons milk

2 tablespoons olive oil

2 tablespoons pizza sauce (or tomato ketchup)

3 tablespoons grated mozzarella cheese

Toppings- I used 1 black olive, 1 tablespoon chopped capsicum and tomato

1 teaspoon dried herb (or mix oregano and basil)

1/4 teaspoon red chilli flakes

Method:

In a mug that you are using, mix all purpose flour, baking powder, baking soda, salt. Mix all the dry ingredients.

Add milk and olive oil. Mix with a fork, so that you don’t have any lumps.

Spread the pizza sauce on it.

Top it up with grated cheese and spread toppings.

Sprinkle dried herb and red chilli flakes.

Microwave for 1 minute.You will see that cheese has melted and is bubbling on the top.

Enjoy right away.


Notes:

You might need to microwave for 1 minute 10 or 20 seconds. The timing is based on my 1200W microwave so your timing might vary.

Cooking time might also vary depending on the size of the mug. The mug I used is around 1 and ¾ cup.

Always keep an eye, just in case you see that it is overflowing. Pause for 2 seconds and start the microwave timer again.

Bell Peppers, Sweet Corn and Tomato Cheese Thin Crust Pizza: Whole Wheat Dough: Vegetarian Pizza



Pizza, popcorn, beer and movie- ah the best combination-ever!

Have you ever met someone who doesn’t like pizza? Me neither. How about these interesting pizza facts then?
  • The average pizzeria uses roughly 55 pizza boxes per day.
  • 36 percent of all pizza orders want their pizza topping pepperoni
  • 94 percent of Americans eat pizza regularly.
  • Cheese wasn't added to pizza until the late 1800s.
  • The largest pizza in the world was made in 1990 at Norwood Hypermarket in South Africa. For the pizza, they used 500 kg of flour, 800 kg of cheese and 900 kg of tomato puree. The pizza was measured 37.4 meters, enough to secure an entrance in the Guinness Book of Records as the largest pizza ever.
And making pizza is so easy peasy if you have crust or base ready. Now do you remember two weeks back I posted this 100% whole wheat pizza dough recipe? I saved half of the dough in the freezer and this Sunday turned into quick thin crust pizza. Bell Peppers, Sweet Corn and Tomato Cheese Thin Crust Pizza is the best vegetarian pizza you will ever have. Ofcourse you need to be fond of thin crust, we both are huge suckers of thin crust pizza, I have also made thin crust New York Pizza before. Honestly, thick crust or normal crust pizza tastes like cooked dough to us;-)



I used red chill pesto as pizza sauce but you can use roasted garlic bell peppers sauce, roasted tomato chutney or even ketchup. For toppings I threw in some chopped chunks of capsicum, frozen corn and roundels of tomatoes. You can use any other veggies like zucchini, aubergine, onions, olives, jalapeno, peppers or even green leaves like spinach, basil or arugula. I opted for mix of mozzarella cheese and cheddar cheese, but that again depends on your choice. You can choose blue cheese, feta cheese or even parmesan cheese. That’s what I looove about pizza. You can add in anything that your mind and heart needs at that time.  Pizza doesn’t ask silly questions, it just understands.

Ingredients:
2 tablespoons red chilli pesto sauce
1/4 cup chopped bell peppers
4 tablespoons sweet corn (I used frozen)
1 tomato chopped into rings
1/4 cup mozzarella cheese
1/4 cup cheddar cheese
1 teaspoon oregano
1/4 teaspoon black pepper powder
1 tablespoon cornmeal (see notes)

Method:
Preheat the oven at 190C.
Sprinkle corn meal on the pizza pan or tray.
Roll out the dough into thin crust medium size. Transfer the rolled dough on the pan. Prick holes with fork.
Apply pizza sauce all over the base. I used chilli pesto sauce.
Arrange all the veggies on the base. Sprinkle salt, pepper and oregano.
Top the veggies with cheese. Pinch or fold the sides such that it looks like crust.
Bake for 8 minutes at 190C. Reduce the temperature to 180C and bake again for 2 minutes. The cheese must have melted and turn bubbly.
Slice and serve.



Notes:
You can make normal thick crust pizza too. Bake it at 180C for 10 minutes and then 170C for 5 minutes.
Cornmeal is optional, it helps to give nice crispy texture to pizza crust. You can grease the baking pan with little olive oil and bake instead.

Serving suggestions:
Serve pizza with any drinks. See drinks menu for ideas.
Make a whole platter. Serve pizza with baked sweet potato wedges on the side with kiwi yogurt dip.

New York Style Pizza, From Scratch With Vegetables Toppings



Who doesn’t know about Pizza? Pizza is an oven-baked, flat, round bread typically topped with a tomato sauce, cheese and various toppings. Pizza was originally invented in Naples, Italy, and the dish has since become popular in many parts of the world.

The word Pizza makes our mouth water and adds smiles to our faces. Therefore before I go ahead I will like to share some fun facts about Pizza.

  • The average pizzeria uses roughly 55 pizza boxes per day.
  • The highest-grossing single-unit independent pizzeria in the nation, Moose's Tooth Pub and Pizzeria, is in Anchorage , Alaska. Its annual sales are approximately $6 million.
  • 36 percent of all pizza orders want their pizza topping pepperoni
  • 94 percent of Americans eat pizza regularly.
  • Cheese wasn't added to pizza until the late 1800s.
  • Frozen pizzas were introduced to Americans by the Celentano Brothersin 1957. At that time, frozen pizzas were only available in grocery stores.
  • The largest pizza in the world was made in 1990 at Norwood Hypermarket in South Africa. For the pizza, they used 500 kg of flour, 800 kg of cheese and 900 kg of tomato puree. The pizza was measured 37.4 meters, enough to secure an entrance in the Guinness Book of Records as the largest pizza ever.

I hope you all enjoyed reading these facts. Moving to the recipe, this month’s task from  Baking Partners group was to make pizza. Making pizza from starch only sounds tough but making it is very simple and fun. I am happy that I got the chance to try my hands on New York Style Pizza. I was so happy and amazed by its taste and texture. I opted to make thin crust pizza (Mr. Husband likes it this way) with lots of vegetables as toppings. All I can say is there is no pizza better then homemade pizza :)

Ingredients:

For pizza dough (for  1 very large pizza or 2 medium ones )
Bread flour - 2 1/4 cup
Salt - 1 1/ 2 tsp
Lukewarm water - 1 cup
Sugar - 3/4 tsp
Instant yeast - 1 tsp
Olive oil - 2 tbs

For pizza sauce
Peeled plum tomatoes - 1 can
Extra virgin olive oil - 1 tablespoon
Red pepper flakes - pinch 
Salt
Basil leaves - 2 sprigs
Unsalted butter - 1 tablespoon
Garlic cloves - 2 medium (grated)
Onion - 1 medium (chopped)
Sugar - 1 teaspoon
Dried oregano - 1teaspoon
Salt - as required 

For topping
Mozzarella cheese– ½ cup grated
Parmesan cheese- ½ cup grates
Vegetables- ½ red, yellow and green capsicum (cubed), ½ onion (sliced), ½ cup cherry tomatoes (chopped rounds)

Method:

For the dough
  1. In a bowl combine bread flour, salt, olive oil, yeast, sugar and add lukewarm water to it and knead well for about 10 -15 minutes just like chapatti dough. Keep the dough covered for 30 minutes and then knead again. This time you will reach at a point where the dough will be stretchy and must pass window pane test.
  2. Divide the dough in 2 equal parts and keep in the Ziploc bag in the fridge for minimum 24 hours and maximum up to 5 days. Remember to take out the dough from fridge at least 1 hour before baking (to bring it to room temperature).(I kept my dough overnight and used it next day)

For the sauce
  1. In a blender blend the canned tomatoes. Do not puree it, blend to form chunky mixture.
  2. In a pan heat butter and olive oil and when butter melts throw in grated garlic, oregano, pepper flakes, pinch of salt and cook for 2 minutes.
  3. Add tomato puree, chopped onions, basil sprigs, and sugar and bring it to simmer. Let it cook for about 1 hour (stiring in between) till the sauce thickens and reduces t half.
  4. Mix salt and let it cool.

For Baking:
  1. 1 hour before baking; preheat oven to 400F/ 200C. Turn single dough ball out onto lightly flour surface. Gently press out dough into rough 8-inch circle and then roll the dough like a roti with rolling pin to form thin crust. Transfer to pizza pan.
  2. Spread approximately 2/3 cup of sauce evenly over surface of crust. Add all the vegetables toppings evenly and spread 1/3 of cheese over sauce evenly.
  3. Bake until cheese is melted with some browned spots and crust is golden brown and puffed, 10 to 15 minutes or varies depends on your oven
  4. Transfer to cutting board, slice, and serve immediately.
