Paneer Tikka Masala
































Paneer Tikka Masala is a simple and aromatic dish. Marinated barbeque paneer with tasty tomatoes gravy is the best combination. It can be served as a side dish and also main course. A must try variety!

Ingredients
For Marinating
1 block of paneer/cottage cheese
1/2 tsp salt
1/4 tsp red chili powder
1 tbsp grated ginger
1/2 tsp coriander powder
1 tbsp yogurt
1 tbsp oil
For Gravy
3 medium size tomatoes
1 tbsp oil
1/2 tsp cumin seeds/jeera
Pinch of asafoetida/hing
2 bay leaves/tej patta
1 tbsp coriander powder
1/2 tsp red chilli powder/lal mirch powder
1/4 tsp turmeric/haldi
1/2 tsp sugar
1 tsp corn flour
2 tbsp finely chopped cilantro/coriander/dhaniya
1/4 tsp garam masala

Method:
  1. Slice the paneer in about 1/8 inch thick and about in one inch squares.
  2. Mix ginger, salt, pepper, coriander, and yogurt with sliced paneer in a bowl, cover it and let the mixture marinate for at least an hour or upto 12 hours.
  3. Blend tomatoes and keep it aside.
  4. Dissolve the corn flour in 2 tablespoons of water and keep aside.
  5. Heat 1 tbsp of oil in flat frying pan on medium heat, next put the marinated paneer in frying pan and gently stir-fry for about 3 to 4 minutes until paneer becomes light brown.
  6. For gravy, add 1 tbsp of oil in a frying pan, when oil is ready add cumin seeds and asafoetida.
  7. Add blended tomato, coriander powder, turmeric, red chili powder, sugar, and cook for about 4 minutes on medium heat.
  8. Add the corn flour mixture and stir for few minutes till the sauce thickens.
  9. Then add in it paneer and let it cook for 3 to 4 minutes
  10. Finally add cilantro and garam masala stir slowly and cover the pan for few minutes.
Serve hot with bread or rice.

Mint Cottage Cheese Patties/Paneer Pudhina Tikki





























Oh yes! Its summer time and I wanted to eat something grilled, simple and spicy.And , I remembered the simple, easy to make and awesome tikkis with paneer that I had once in a resort back in India. These are tasty Pudhina Paneer tikkis served piping hot and is absolute delight for summer barbeque and picnics

Ingredients:
1 cup crumbled cottage cheese/paneer
2 tablespoons corn flour
1tbsp oil
2 tablespoons chopped mint leaves/pudhina
1 green chilli finely chopped
1 teaspoon chat masala
Salt according to one’s taste

Method:
Mix all the ingredients in a bowl
Wet for palms a bit and roll them into the round shape of tikkis/patties. It’s important to wet your hands; otherwise it is difficult to make the tikkis.
Heat a tawa/pan and add a tablespoon of oil and pan grill the tikkis until brown on both sides.
Serve Pudhina Paneer Tikkis hot with chutneys or dips.

Corn Paneer Bhurji



Paneer Bhurji is one of the easiest dishes; it can be prepared with very less efforts and time. Every time I make paneer bhurji I missed the crunch in it; so this time I added boiled corn and I was so totally satisfied with the taste. There is one more thing that I like about this recipe that is very versatile paneer recipe –one can add or delete any ingredients to this dish.

Ingredients:
  • 1 tbsp oil
  • 1 onion, finely chopped
  • 1 green chilli, finely chopped
  • 1 tomato, finely chopped
  • ¾ tsp red chilli powder
  • 1 ½ tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tbsp water
  • ½ cup boiled corn (makai)
  • 2 cups paneer (cottage cheese), crumbled or grated
  • ½ tsp salt (or to taste)
  • ¼ cup chopped capsicum
  • 1 tsp chopped coriander leaves

Method:
  1. Dilute red chilli powder, coriander powder and turmeric powder in 1 tablespoon water and keep it ready.
  2. In a pan, heat oil. Add finely chopped onion and fry until golden brown.
  3. Then add chopped green chilli and mix.
  4. Add chopped tomato and fry well until thickens and gets soft.
  5. Add diluted spice mix and saute on a low heat for 2 – 3 minutes until it is well blended with tomato.
  6. Add crumbled or grated paneer, corn, capsicum and salt to taste. Mix all the ingredients well. Cover it with lid and let it cook for 5-8 minutes. Garnish with coriander leaves.
Serve hot with bread or rice.
